Sweet Potato Buddha Bowl

One of our favorite, super easy recipes to make with Brick Street Farms’ Mixed Kale is this Sweet Potato Buddha Bowl! A Buddha Bowl is a big bowl of healthy plant-based deliciousness! This one is so nourishing and cozy – it never fails to hit the spot!

 

Bowl ingredients:

-Olive oil (or coconut/avocado)

-One sweet potato

-⅓ medium red onion

-A few stems of broccolini

-2 big handfuls of Brick Street Farm’s Mixed Kale

-Salt & pepper

-Tahini

 

Chickpea ingredients:

-⅓ cup of chickpeas

-About two shakes of the following:

-Cumin

-Chili powder

-Garlic powder

-Salt

-Pepper

-Oregano

-Turmeric

 

Recipe:

-Preheat oven to 400 degrees

-Coat a large pan in olive oil of choice

-Cut the sweet potato in half and place each half face down on the pan

-Bake for 10 minutes and then flip the sweet potatoes over and add broccolini and red onion to the pan (drizzle them with olive oil & salt and pepper)

-Bake for another 8-10 minutes, and then add massaged kale to the pan (drizzle with olive oil & a dash of salt)

-Bake for another 5 minutes and then set the pan of veggies aside

-While the veggies are roasting, place your chickpeas in a bowl and add all the seasonings

-Heat a pan on medium heat with one tbsp of olive oil, add the chickpeas, stir them frequently until the chickpeas are golden brown (should take about 7-10 minutes)

-To serve: add kale, onion, broccolini, and sweet potatoes to a bowl (feel free to chop the sweet potato into bite sized pieces). Top the bowl with the chickpeas and as much tahini as you want!
