This is my go-to spaghetti squash recipe! It’s so easy, so healthy, and oh so delicious!
Ingredients:
⁃ 1 spaghetti squash
⁃olive oil
⁃2 tsp minced garlic
⁃ 1/2 of a chopped yellow onion
⁃ baby tomatoes
⁃ Brick Street Farms Basil
⁃ optional: Brick Street Farms Arugula & nutritional yeast
Recipe:
⁃ preheat oven to 400 degrees
⁃cut the spaghetti squash if half length wise and scrape out the seeds
⁃drizzle each half with olive oil & roast face down on a pan for 35-40 minutes
⁃remove it from the oven when it’s fork tender
⁃let it cool before you scrape out the squash with a fork
⁃sauté minced garlic and chopped onion in a pan with olive oil over medium heat
⁃once the onion is softened, add as many baby tomatoes as you like
⁃after about 2-3 minutes, stir in the spaghetti squash
⁃remove the pan from the heat and fold in as much basil as you like
⁃serve on a bed of Brick Street Farms Arugula with some nutritional yeast
⁃enjoy!
