Vegan Cauliflower Alfredo Pasta

This Vegan Cauliflower Alfredo Pasta was a complete experiment but it came out SO good!! I love taking a healthy, plant-based twist on my favorite comfort foods! Check out the recipe below:

Vegan Cauliflower Alfredo Pasta! (1-2 servings).

Ingredients:

•1/3 head cauliflower

•2 tbsp nutritional yeast

•1 1/2 tbsp @sperofoods “The Goat” vegan cheese (we carry this in our Farm Market!!)

•1/2 cup plant-based milk (add more as needed)

•3 good shakes of garlic powder

•salt & pepper to taste

•favorite Brick Street Farms greens! (I used about two handfuls of Mixed Kale)  

•pasta of choice (i used @mustpasta)

Recipe:

•bring 3 cups of salted water to a boil

•add chopped up 1/3 of cauliflower head to boiling water

•boil until cauliflower is soft (10ish minutes)

•remove cauliflower from boiling water and let it cool for a few minutes

•add your pasta to the boiling water & follow the box instructions for boiling time

•blend cauliflower, nutritional yeast, Spero Foods “The Goat” vegan cheese, garlic powder, salt, pepper, and plant-milk in blender to make alfredo sauce

•pour the sauce into a pan over low heat

•add your greens to the pan of sauce (i did about two handfuls of Mixed Kale)

•stir it up until your greens are nice and soft

•stir in the pasta

•serve & enjoy!!
